You give them a bunch of stimuli, and ask them to put them in order of least to most of some attribute. For example, give the subject five cups of coffee and ask them to rate them in order of least to most sweet. Or give them 10 different recordings of an orchestra and ask them to rate them from least to most spacious. The nice thing about this type of test is that it's pretty easy for subjects to understand the task. We put things in rank order all the time in day to day life. The problem with this test is that you'll never fund out the relative levels of the ratings. You know that this cup of coffee was sweeter than that cup of coffee, but you don't know how much sweeter it is...
